One of the most important answers is oxidation. Understanding oxidation is the key to understanding where oolong tea sits within the spectrum of tea.
What Is Oxidation in Tea?
Oxidation begins naturally as soon as tea leaves are picked.
Once the leaf is separated from the tea plant, its cells are exposed to oxygen. Enzymatic reactions begin to change the compounds inside the leaf, gradually transforming its color, aroma, and flavor.
This is similar to what happens when you cut an apple and leave it exposed to air. The surface slowly darkens as oxidation takes place.
Tea makers carefully control this process.
By stopping oxidation early, allowing it to continue partially, or letting it proceed much further, a tea maker can create very different styles of tea from the same tea plant. This is why oxidation is one of the most important ideas behind the spectrum of tea.
Green Tea, Oolong Tea, and Black Tea: Where Does Oxidation Fit?
In a simplified way, we can think about tea along a spectrum:
Green Tea → Oolong Tea → Black Tea
Green tea is made by stopping oxidation very early. One of the first important steps after harvesting is kill-green, or sha qing (殺青), which uses heat to deactivate the enzymes responsible for oxidation. The goal is to preserve much of the fresh character of the leaf.
Black tea, on the other hand, is intentionally allowed to oxidize extensively before the oxidation process is stopped.
Oolong tea sits between these two. It is partially oxidized, and this is one of the characteristics that makes oolong so fascinating.
But there is an important detail:
Oolong is not simply "halfway between green tea and black tea."
The oxidation level of oolong can vary dramatically. Some oolongs are lightly oxidized and floral, while others are heavily oxidized, darker, fruitier, and much closer in character to black tea.
Oolong Can Be Almost Like Black Tea
This is where things become interesting.
Not all oolong teas are lightly oxidized. Some oolongs can be very highly oxidized—sometimes approaching the upper end of the traditional oolong spectrum.
For example, Red Oolong (紅烏龍) from Taiwan is intentionally made with a much higher degree of oxidation than many familiar Taiwanese oolongs. Its liquor can be deep amber to reddish, with flavors that may remind you of black tea: ripe fruit, honey, caramel, and a fuller body.
If someone simply looked at the color in the cup, they might easily assume: "This is black tea."
But appearance alone does not tell the whole story. Its processing places it within the oolong category. This is one reason why tea classification cannot be determined simply by the color of the brewed tea.
Then Why Isn't Highly Oxidized Oolong Simply Black Tea?
Because oxidation is only part of the story.
Tea production is a combination of many steps, including:
- Withering
- Bruising or agitation
- Oxidation
- Fixation
- Rolling
- Drying
- Roasting
The sequence, intensity, and purpose of these steps all influence the final tea.
Oolong production is particularly flexible. Tea makers can manipulate the leaf through controlled bruising and oxidation, then stop the process at a desired point and continue shaping the tea through rolling, drying, and sometimes roasting. This creates an enormous range of aromas and flavors.
That is why oolong can be light and floral—or dark, fruity, and almost black-tea-like.
Roasted Tea Can Also Be Misleading
Oxidation isn't the only thing that changes the appearance and aroma of tea.
Roasting can dramatically transform a tea. A roasted tea can develop aromas of toast, nuts, caramel, wood, or smoke. The brewed liquor may also become darker and richer.
This can make a tea appear much more "black tea-like" than its actual category suggests.
But the opposite can happen too. A black tea that has been heavily roasted or smoked may remind someone of a roasted oolong.
Lapsang Souchong (正山小種) is a good example. Lapsang Souchong is a black tea, not an oolong. Its distinctive smoky character comes from the traditional smoking process, which can create a very different sensory experience from the fresh, fruity character people often associate with black tea.
So if you judge a tea only by aroma or color, it is easy to misclassify it.
The Same Tea Plant Can Create Very Different Teas
One of the beautiful things about tea is that the tea plant itself does not tell you exactly what the final tea will taste like.
A tea leaf is more like a starting point.
Through different levels of oxidation, heat, rolling, drying, and roasting, tea makers can transform that leaf into very different styles.
Think of it like grapes. The same basic idea applies to wine: the grape variety matters, but what happens after harvesting also matters enormously. Tea works in a similar way.
The leaf provides the potential. The processing reveals the character.
Don't Judge a Tea by Its Color
A common mistake when learning about tea is to use appearance as the primary way to identify it.
- A pale golden tea must be green tea.
- A dark red tea must be black tea.
- A roasted, nutty tea must be oolong.
But tea is more complicated than that.
- A highly oxidized oolong can look like black tea.
- A roasted oolong can become dark and deeply aromatic.
- A smoked black tea can smell surprisingly similar to a heavily roasted tea.
The color in your cup is the result of many factors—not oxidation alone.
Where Does Oolong Really Belong?
Rather than thinking of tea as a collection of completely separate categories, I find it more helpful to imagine it as a spectrum.
At one end, you have teas where oxidation is stopped very early. As oxidation progresses, the character of the tea changes. Oolong occupies a broad middle territory, with an incredibly wide range of oxidation levels and processing styles.
Further along the spectrum, black tea is generally produced through extensive oxidation.
This is why two oolongs can taste completely different from each other—and why one oolong may remind you of green tea while another may remind you strongly of black tea.

There are no perfectly sharp lines between every style. And that is exactly what makes tea so interesting.
